- 2 large heads of broccoli, washed and chopped
- 2 tbsp freshly squeezed lemon juice
- Zest of one lemon
- 1 tbsp finely chopped garlic
- 3 tbsp olive oil
- 1½ tsp fine grain sea salt (or ¾ tsp if using table salt)
- ¼ tsp dried red pepper flakes
- Ground black pepper to taste
- Optional: Toasted pine nuts for garnish
🥦Instructions🌱
1. Prep the Broccoli: Cut the broccoli into evenly sized florets (about 1½ inches wide), keeping a bit of the stems on. Wash well under cold running water.🌿
2. Blanch: Drop the broccoli into a pot of boiling water for about 3 minutes until crisp-tender and bright green. 🫕
3. Shock: Transfer the broccoli to a bowl of ice water for at least 30 seconds to stop the cooking process. Drain and pat dry.🥦
4. Prepare Lemon & Garlic: Finely chop the garlic, then zest and juice the lemon. Save any leftover juice for a salad dressing!🍋
5. Combine: Stir 1½ tsp sea salt into the 2 tbsp of lemon juice. Heat olive oil in a wide pan over medium-low heat, then add the garlic and lemon zest, sautéing for about a minute until fragrant (be careful not to burn the garlic!).🌱
